Proposal: Allow Users to Set Account-Wide Default GPT Model

With GPT-5 released today (and the mini and nano variants), would it be a good idea to let users select an account-wide Default model rather than the Lindy-determined Default? Then the user could switch whatever they want the default model to be across all Lindies as desired. Could be helpful to let users mass-convert models.
