Help Needed: Extract Text from 300 PDFs and DOCX Files Efficiently

Okay, I'm still having a ton of issues looping through bulk documents and extracting text from them. Does anyone have a way to trigger this with like 300 documents (PDFs and DOCx's) at a time? I've been trying to use the "new Files" trigger in Google Drive, but it is unable to analyze any of the media. I also tried to attach a ton of the documents via email, but that didn't work either
