Troubleshooting HubSpot 'Update Contact' Action Issues

I'm trying to use the Hubspot action "Update Contact", but tasks just skip right over it, and do not push any updates to Hubspot. Am I missing something here? Earlier in the flow I use the hubspot action: "get contact by email", but do I need to add that action again immediately prior? It is also a bit strange because I am prompted to enter free text in the "update contact" fields, but many of them are actually radio select in hubspot.
